New batch cresting and ready for the drying room. 84 hours in the fermenter @ 68f. At this point they’re pH is just dropping below 5 and the koji has well and truly taken hold. The wild locto ferment is done but the yeasts introduced from spent cider lees will continue to develop at the lower temp in the drying room. The koji will do the same, it is aggressive, we could try for slower ferment but the koji quickly becomes too established and literally pulls the casing of the salami as it grows, the higher air flow and lower humidity in the drying room helps keep this in check so long as we catch it at around this point in its development.

Open Garden Days Begins with Gardens Overlooking the Bay

Enjoy eclectic gardens and breathtaking views of Penobscot Bay on the first day of the Belfast Garden Club’s annual Open Garden Days, Friday, June 14, from 10 a.m. to 4 p.m, rain or shine. Homeowners Karen Young and Paul Robie will welcome visitors to their lovely naturalistic landscape at 220 Upper Bluff Road in Northport. There is a $5 donation, which helps the Belfast Garden Club fund public garden initiatives and contribute towards a Unity College scholarship.

When Young and Robie bought their 18-acre ocean-front property more than 30 years ago, land that wasn’t wooded or precipitous was covered with waist-high brush. Inspired by Japanese landscape design, they carved gardens out of the rocky soil, bordering them with the unearthed rocks and strategically placing larger stones to create sculptural interest.

Young and Robie also love color, which is evident in the annuals that fill containers and accent the perennial beds. Mature rhododendrons, Siberian irises, Rosa rugosa, and ladies slippers typically are in bloom in June. Raised beds contain vegetable plants and a beehive on the property is evidence of the owners' wish to create gardens that attract pollinators and thrive with minimal use of manufactured chemicals.

An in-progress, trellis-topped water feature is on a steep, rough trail down to a tea house that was designed after the building at Thuya Gardens on Mt. Desert Island. It offers another view of the bay, and was sited to view summer moonrises.

Belfast Garden Club Plant Sale at Belfast Boathouse May 25

Belfast – The Belfast Garden Club will hold its annual plant sale on Saturday May 25, 2019 from 9 a.m. to noon at the Belfast Boathouse (located at the foot of Commercial Street). The sale features a wide assortment of Maine-grown perennials, annuals, herbs and vegetable seedlings. There are also gardening tools, magazines and books, along with homemade baked goods.

Proceeds from the plant sale help provide an annual student scholarship offered at Unity College. The club uses additional funds from the sale to maintain 12 public gardens in Belfast, to provide nine educational programs each year on horticulture, conservation and natural history topics, and to donate new books to the Belfast Free Library.

First the good news. The Camden Farmers' Market begins its 45th season tomorrow at the former Tannery site on Washington St. The bad news is that we will be missing opening day. We were involved in a crash three weeks ago in Damariscotta. A mini van came out of a side street and T boned the passenger side of our van and totaled it. At the moment this leaves us with one market vehicle this week. However, we expect to start the new season next week..
